Red Valerian.
It’s hard not to have noticed this one blooming all around you in urban areas especially here in the south of the UK. It loves to brighten up a stone wall whether it’s invited or not and the bees and butterflies love it.
The flowers can range in colour from red to pink to white. Young leaves are edible raw or cooked and can be used in soups. The roots can also be cooked and eaten in similar ways.
It’s not a prize edible in my opinion,but lovely to look at and know that it’s an option to eat.
